Favorite Things!

I thought I would make a list of my favorite things for Klimb Kids and there moms:

My Klimbers enjoy the Very Berry Chewy Bars and Snickerdoodle cookies!  I also have used their chocolate chips too.  They make great trail mixes that are safe which is so nice for kids with nut allergies! Enjoy life with Enjoy Life Eat Freely Foods!

My Klimbers love the Pumpkin and Farmhouse mixes.  I also add protein powder to the mix. My Klimbers bring these protein waffles to swim meets! They have many varieties to choose from such as cinnamon apple, chocolate chip, blueberry, etc.  Safe for kids with egg allergy just substitute half and half, milk, soy milk, greek yogurt, sour cream into the mix instead of the egg that the recipe calls for and they turn out great!  I bought my mix from www.amazon.com . Make sure you double-check the ingredients as I have only used Pumpkin, Farmhouse, Cinnamon Apple varieties. So fast to make and so good.

I also have used the Farmhouse Mix with seasonings such as Lawry’s and garlic to make a batter for chicken tenders.  I just dip the tenders into milk and then the Farmhouse mix with seasoning and they turn out great cooked in a skillet with canola oil.

Lucy’s Cookies

My sister just shared these cookies with us and my allergy kid loved the Cinnamon Thins.  Comes in Oatmeal, Sugar, and Chocolate Chip too.  No gluten, peanuts, tree nuts, milk or eggs.  You get about 16 cookies for $4.79.

Happy Holidays and Happy New Year! Making Cookies with Molly!

Hello to all my fellow KLIMBERS out there!  As usual this KLIMB INC. Mom has been busy Klimbing Life!  Volunteering at school, doctor appointments, and school conferences.  I hope everyone is doing great and had a wonderful Thanksgiving.

Molly and I are busy again cooking in the kitchen.  I thought we would share three of our favorite holiday cookie recipes.  Gingerbread, Whipped Shortbread Cookies, and Snowball Cookies.  All made without eggs, tree nuts, or peanuts!  For these recipes you need ”chilling time”.  I like to make my dough the night before and then when my Klimb Kids are ready the dough is made and we can enjoy cutting and decorating them!  They also are great to make ahead and freeze.  I always freeze or refrigerate my cookies because they stay fresher longer especially since we don’t use eggs in our recipes.  I found that cookies get stale if I don’t refrigerate or freeze them.  I hope you like these holiday cookies!  I know my Klimb Kids did!

My favorite website for recipes is www.allrecipes.com.  You can put in the ingredients you DON’T want in the food, so it is a way of getting allergy free recipes quickly. 

My Klimb Kid, Hunter asked if we could make Gingerbread Cookies this year.  He loved this recipe! Here is the recipe we used:

Soft Gingerbread Cookies                        

Gingerbread Men by my Klimb Kids

3/4 cup molasses

1/3 cup packed brown sugar

1/3 cup water

1/8 cup softened butter

3 1/4 cup all-purpose flour

1 tsp. baking soda

1/2 tsp. allspice (I doubled the spices for more flavor! So I used           1 tsp. instead of the 1/2 tsp. listed here.)

1 tsp. ground ginger

1/2 tsp. ground cloves

1/2 tsp. cinnamon

1 tsp. vanilla

In a medium bowl, combine the flour, baking soda, allspice, ginger, cloves, cinnamon, vanilla. Stir them into wet mixture until all the dry is absorbed. Cover dough and chill for at least 3 hours.

Preheat oven to 350 degrees. On a lightly floured surface, roll the dough to 1/4 inch thickness. Cut out into desired shapes. Place cookies 1 inch apart onto ungreased cookie sheets. Bake 8-10 minutes. Remove to cool on wire racks. Decorate with safe frosting and candies!  For the cookies we didn’t decorate, I sprinkled the tops with sugar before putting them in the oven.

Whipped Shortbread Cookies (from www.allrecipes.com)

1 cup butter                                             

1 1/2 cups all-purpose flour

1/2 cup powdered sugar

1 tsp. vanilla

1 tbsp. milk or milk substitute (rice or soy milk) 

12 maraschino cherries, cinnamon candies, sprinkles

Mix ingredients except the cherries or candies for 10 minutes.  I even mixed a bit longer to really whip this cookie batter up!  If you have a Kitchen Aid this makes it a lot easier!  Chill the dough overnight.  I wrapped mine in wax paper formed into a roll for easy cutting.  Let thaw a bit before cutting and placing cherries, sprinkles, and candies in center of cookies.  Bake at 350 degrees for 15 – 17 minutes.

These are light and melt in your mouth good!

SNOWBALL COOKIES (Really fun to make with your Klimbers!)

1 cup (2 sticks) butter or margarine softened        

Gingerbread and Snowball Cookies

1/2 cup granulated sugar

1 tsp. vanilla extract

1 3/4 cups all-purpose flour

36 Safe Hershey kisses Brand Milk Chocolates (READ PACKAGES for Allergy info.) I used Milk Chocolate and Peppermint that were safe for my allergy Klimb Kid.

Powdered sugar

Beat butter/margarine, granulated sugar, and vanilla in large bowl until fluffy. Add flour. Blend well. Cover and refrigerate for 1-2 hours. Remove wrappers. My Klimb Kids like to do this! Preheat oven to 375 degrees. Take about 1 tablespoon of dough and shape it around  chocolate Kiss! Roll it into a ball and place on ungreased cookie sheet. My Klimbers love this part! Bake for 10 t 12 minutes. Cool slightly and roll in powdered sugar. Let cool completely. Store in container. I store in refrigerator. Can roll in powdered sugar again before serving if you want.

Happy Fall to All! Molly and Koach Cook Pumpkin Bread!

Hello everyone!  Klimb Kid Molly and I wanted to share two delicious pumpkin bread recipes with you!  They are both nut free, egg free, and dairy free!  Since Klimb Kid Kasey has food allergies it is always a challenge to find tasty seasonal treats for him to enjoy.  These two bread recipes were a big hit.  Molly and I were very excited that he was able to enjoy the taste of pumpkin.  Kasey discovered that he loves pumpkin!  Have fun cooking in the kitchen!  See how much you and your family enjoy the wonderful taste and smells of cinnamon, nutmeg, and pumpkin!  Happy fall to all!

Pumpkin Flax Bread (An excellent breakfast bread)

1/2 cup ground flaxseed

1/2 cup water

1 cup brown sugar

1 15oz. can pumpkin puree

1 cup all-purpose flour

1 cup white whole-wheat flour

1tsp baking soda

1 1/2 tsp pumpkin pie spice

1/2 tsp salt

1/2 tsp baking powder

Preheat oven to 350 degrees.  Spray a 9 by 5 inch loaf pan with cooking spray and lightly coat with flour.  Mix the flaxseed and water in a food processor.  Add the brown sugar and pumpkin. Process until combined.  Mix the all -purpose flour, white whole -wheat flour, baking soda, pumpkin pie spice, salt and baking powder in a separate bowl.  Add the flour mixture to the pumpkin mixture and process until smooth.  Pour the batter into the prepared loaf pan. Bake for 60-70 minutes or until a toothpick comes out of the center clean.  Serves 16 slices. 

Kasey, Lilly, Ike, Molly and Ben enjoyed this served with turkey sausage and apple slices for a delicious breakfast treat!

Nutrition info. Calories 130, Fat 1.5 g, Saturated fat 0 g, Trans fat 0 g, Carbs. 28 g, Cholesterol 0 mg, Sodium 170 mg, Fiber 3 

 Quick and Yummy Pumpkin Bread (No nuts, eggs, or dairy!)

3 1/2 cups all-purpose flour

2 cups packed brown sugar

2/3 cup white sugar

2 tsp baking soda

1 tsp salt

1 tsp ground nutmeg

1 1/2 cinnamon

2 cups pumpkin puree

1 cup vegtable oil

2/3 cup vanilla soy milk

Preheat oven to 350 degrees. Grease and flour 2 (8×4) loaf pans.  Mix together flour, brown sugar, white sugar, baking soda, salt, nutmeg, and cinnamon. Add the pumpkin puree, oil, and vanilla soy milk.  Mix well.  Divide batter evenly between the 2 loaf pans.

Bake for 45 -60 minutes or until toothpick inserted in center of bread comes out clean. Remove from oven and lightly cover loaves with foil. Steam for 10 minutes. Remove from pans.  Cool and enjoy.

Klimb Kids enjoy this delicious bread with a cup of warm cider or hot cocoa!
